Fancy Brown Rice And French Green Lentils

Ingredients:

  • 1 cup french green lentils- don'tsp use regular green lentils as they mush out and totally change the texture oft the dish. the french green lentils keep their shape
  • 1 tbsp canola oil
  • 1 tbsp ghee
  • 1/2 tsp asafoetida
  • 1 tbsp cumin seeds
  • 1 cup finely chopped onions
  • 1 inch cinnamon
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp cayenne
  • 6 cups water

Directions:

  1. Combine rice and lentils. Wash thoroughly - rinsing twice. Set aside.
  2. In a pot large enough to cook the rice and lentils melt the ghee and oil together. Heat o high for 1 minute
  3. Add asafoetida and stir for 15 seconds.
  4. Add cumin seeds immediately, stir and let sizzle 30 seconds.
  5. Reduce heat to medium, add onions and cinnamon, stirring well into the cumin seeds.
  6. Saute onions for 8-10 minutes or until brown
  7. Add turmeric, salt and cayenne. Cook 1 minute.
  8. Add water, coconut milt and the mixed lentils and rice.
  9. Increase heat to high and bring to boil.
  10. Cover and simmer for at 1 least 1 hour,
  11. Stir and ;make sure rice cooked.
  12. Let rice to sit 5 minutes.
