Family Favorite - Toffee Banana Bread

Ingredients:

  • 1/2 cup shortening
  • 1/4 cup butter
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup toffee pieces (such as smashed heath bars)
  • 1 cup walnuts, coarsely chopped (optional)

Directions:

  1. Grease and lightly flour 2 loaf pans. Preheat oven to 350°F.
  2. In a mixing bowl, cream together the shortening, butter and sugar until light and fluffy.
  3. Add the eggs one at a time. Add vanilla and mix until smooth and creamy.
  4. Fold in the mashed bananas. Add the toffee bits and walnuts (if desired).
  5. Let the mixture stand for 10-15 minutes, then pour into prepared pans.
  6. Bake in a 350 F oven for 1 hour. Brush the crust with melted butter. Cool completely before slicing.
