Eggs In Tomato Sauce

Ingredients:

Directions:

  1. In large frying pan sauté onion until lightly browned.
  2. Grate tomatoes on largest holes of a grater.
  3. Mix grated tomatoes and onion then cover and cook over low heat 25 minutes.
  4. Remove cover and break eggs over the surface.
  5. Stir gently to break yolks then cover and cook 4 minutes until eggs are set.
  6. Sprinkle with salt and pepper then serve.
