Ingredients:

  • 1/2 cup canola oil
  • 2 cups sugar
  • 1 oz red food coloring
  • 2 (3 oz) jars plum baby food
  • 2 cups sifted flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 3 eggs
  • 1 tbsp milk
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 2 1/2 cups powdered sugar

Directions:

  1. Combine first nine ingredients in a large bowl and beat with electric mixer for three minutes.
  2. Fold in nuts.
  3. Pour into a greased bundt.
  4. Bake at 325 degrees for 1 hour 15 minutes.
  5. Cool and ice.
  6. To make icing beat together Cream cheese, vanilla, milk and salt.
  7. Gradually add powdered sugar and beat until creamy.
