Easy Cinnamon Swirl Quick Bread

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup sugar
  • 4 tsp cinnamon

Directions:

  1. Set oven to 350 degrees F.
  2. Grease a 9 x 5-inch loaf pan.
  3. In a small bowl mix together all topping ingredients (you can double the amounts if desired for more cinnamon swirl).
  4. In a large bowl combine all the cake ingredients and mix until well combined.
  5. Transfer the batter to the prepared baking dish.
  6. Sprinkle the topping mixture over the batter, then run through with a knife to create a swirl pattern.
  7. Bake for about 45 minutes, or until the cake tests done.
