Ingredients:

Directions:

  1. Wash lettuce and tear into large pieces.
  2. Rub garlic halves around the inside of a large wooden salad bowl, and discard garlic.
  3. In bowl, combine lemon juice, oil, mustard and pepper.
  4. Add egg yolk and mix well.
  5. Add lettuce, croutons and Parmesan, and toss lightly.
  6. Top with additional Parmesan if desired.
