Dilly Lime Rice

Ingredients:

  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 1 3/4 cup chicken broth
  • 1 tbsp dill
  • 1 tsp lime zest

Directions:

  1. Heat olive oil in a medium sized saucepan.
  2. Add onion and sauté until tender
  3. Add chicken broth and bring to a boil.
  4. Add uncooked minute brown rice and stir.
  5. Allow liquid to come to a boil again,
  6. Cover and reduce heat to low.
  7. Cook for 5 minutes.
  8. Add dill and lime zest.
  9. Fluff & serve
