Ingredients:

Directions:

  1. Preheat oven to 325F
  2. Place dates in a bowl. Dissolve baking soda in boiling water & pour over dates
  3. Beat butter & sugar together until light & fluffy
  4. Add egg to butter & sugar & beat again
  5. Sift dry ingredients and add alternately with dates and water to egg mixture. Add essence.
  6. Spoon mixture in a lined and greased loaf tin and bake for 50-55 mins.
  7. Leave loaf in tin for a few minutes before turning out onto a wire rack to cool.
