Ingredients:

Directions:

  1. Wash cucumbers (peeling is optional).
  2. Slice in 3/4 inch thick slices.
  3. Using a melon baller scoop out center careful not to go all the way through.
  4. Set aside In a blender or food processor combine shrimp (reserving 1/8c for garnish) and garlic.
  5. Mix into a slightly lumpy mixture.
  6. Add remaining ingredients.
  7. Mix just until smooth.
  8. Spoon about 1 to 1 1/2 T of mixture in each cucumber.
  9. Garnish top with remaining shrimp.
