  1. Mix all ingredients until well-blended, cover and chill well before serving
  2. * you can also use dill instead of the chives
  3. Note: I like to de-seed my cucumber first, then chop finely and then put in a strainer and add a good dose of salt to pull out the water - I usually do this overnight - keeps the dip from becoming too watery
