Cucumber  Chili Salad Dressing

Ingredients:

  • 225 ml rice vinegar (red wine vinegar also works here)
  • 225 ml water
  • 125 g sugar
  • 1 garlic clove

Directions:

  1. Chop garlic and ginger
  2. Grate cucumber
  3. Chop Spring onions
  4. Deseed and chop Chillis
  5. Boil the vinegar, water, sugar, garlic, salt & Ginger together for about 2-3 minutes until sugar dissolves
  6. When cool - sieve mixture to remove the ginger and garlic
  7. Now pour over the grated cucumber and the chopped spring onions and chillis
  8. Leave for about 2 hours to fuse together
  9. This dressing will keep for about 1 week
