Crock Pot Cajun Roast and Black Beans

Ingredients:

Directions:

  1. Add cooked black beans, tomatoes, stock, thyme, basil, red pepper flakes, cayenne and black pepper to 5 quart crock pot set on low. Stir.
  2. Cut meat into cubes.
  3. Heat a cast iron pan; brown meat on all sides. Add to crock pot.
  4. Saute the vegetables in the olive oil until slightly tender. Add flour and cook for one to two minutes, stirring constantly.
  5. Add vegetables to the crock pot. Stir well.
  6. Cover; cook at least 6 hours on low setting.
  7. Serve over rice.
  8. Add hot sauce if desired.
