Ingredients:

Directions:

  1. Peel and cut potatoes into fries. Soak in cold water until ready to use, but at least 10 minutes.
  2. In a bowl or zip bag, combine masa flour, cornmeal and Cajun seasoning. Blend well.
  3. Drain the potatoes but leave them wet.
  4. Dip fries into the seasoning mixture and shake to coat.
  5. Heat oil (375 deg.) in cast iron pan or deep fryer.
  6. Cook fries in the hot oil for 7-10 minutes until golden brown.
  7. Remove from fryer and drain on paper towels.
  8. Season with salt.
