Ingredients:

Directions:

  1. Combine the cucumbers, onions and carrots in large bowl; sprinkle with salt.
  2. Cover with ice cubes.
  3. Let stand for 6 hours.
  4. Drain; rinse and drain thoroughly.
  5. In a large kettle, combine sugar, vinegar, celery seed, turmeric, nutmeg and pepper.
  6. Add vegetables; bring to boil over medium heat, stirring often.
  7. Reduce heat; simmer, uncovered for 20 minutes, stir often.
  8. Pack the hot mixture into hot jars, leave 1/2 inch head space.
  9. Adjust caps.
  10. Process for 10 minutes in boiling- water bath.
