Creamy Haddock, Mustard & Feta Sauce for Pasta

Ingredients:

Directions:

  1. Cook pasta according to instructions provided and keep warm until sauce is ready.
  2. Heat the margarine in a frying pan.
  3. Sauté the onion and garlic.
  4. Stir in the flour.
  5. Add in the cream and the milk, mixing well.
  6. Bring to the boil, stirring continuously for 3 minutes or until the sauce starts to thicken - the sauce should not be very thick.
  7. Stir in the mustard and feta cheese.
  8. Gently stir in the haddock and then add the spring onions or chives and nutmeg.
  9. Remove from the heat and season to taste with the salt and pepper.
  10. Serve immediately on freshly cooked pasta of your choice.
