Cream Of Vidalia Onion Soup

Ingredients:

Directions:

  1. In Dutch oven, cook bacon until crisp
  2. Remove bacon with slotted spoon to a paper towel leaving bacon grease in pan
  3. Add butter, onions and garlic, cover and cook over low heat,
  4. Stirring until onions are tender and starting to caramelize
  5. Add wine, stock, bay leaf and thyme
  6. Bring to boil
  7. Reduce heat and simmer 30 minutes
  8. Remove bay leaf
  9. Puree in a food processor or blender in batches
  10. Season with salt, pepper, hot pepper sauce, and nutmeg
  11. Add sour cream and combine
  12. Garnish with bacon, croutons and chives
  13. Can be served chilled too
