Cream of Cauliflower Soup

Ingredients:

Directions:

  1. Wash and core cauliflower, chop into florets, reserve 12 tiny florets
  2. Large pot, heat butter, add onion, garlic, cook till soft
  3. Sprinkle flour over onions & stir. whisk in chicken stock. bring to simmer. season. add cauliflower and cook till fork-tender.
  4. Remove from pot and puree in blender. strain into clean pot.
  5. Medium heat, 1/4 cup milk. bring to a boil.
  6. Small bowl, remaining cream and egg yolk. whisk and then add to soup. add few sprinkles of nutmeg. Serve.
