Cranberry Streusel Cake

Ingredients:

  • 3/4 cup brown sugar (packed)
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/2 cup butter
  • 1/4 cup water
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp salt
  • 2 cups cranberries
  • (optional-- blueberries )

Directions:

  1. Streusel mix:
  2. 3/4 cup brown sugar (packed)
  3. 1/2 cup flour
  4. 1 tsp cinnamon
  5. 1/4 cup butter
  6. Blend together.
  7. Set the above mixture aside....
  8. Batter:
  9. . Cream together:
  10. . 1/2 cup butter
  11. 1 cup sugar
  12. Beat in:
  13. 2 eggs
  14. 1 tsp vanilla
  15. 1 cup sour cream (or sub with fat-free yogurt)
  16. Stir in:
  17. 2 cups flour
  18. 1 tsp baking powder
  19. 1/2 tsp salt
  20. Fruit:
  21. 2 cups cranberries
  22. (optional- blueberries)
  23. In a greased tube, bundt, or pan of your preference, spread 1/2 the batter.
  24. Sprinkle half the berries;
  25. Add half the streusel mix.
  26. Repeat the same for the second layer....
  27. Bake 350*F approx 1 hour or until done.
  28. Serve warm or cold- plain or with ice cream.
