Ingredients:

  • 2 tbsp. sugar
  • 2 cups flour
  • 1/4 cup sugar
  • 4 teasp. baking powder
  • 1/2 teasp. salt
  • 3/4 cup milk
  • optional: grated lemon peel or vanilla to taste

Directions:

  1. Toss cranberries with the 2 TBSP. of sugar and set aside
  2. Combine flour,1/4 cup sugar, baking powder and salt. mix well
  3. In small bowl: mix egg, milk, and melted butter
  4. Make a well in the dry ingredients and add the liquid mixture and the cranberries.
  5. Stir just until the dry ingredients are moistened. Don't over mix
  6. Spoon into greased muffin pan..
  7. Fill 2/3rds full
  8. Bake at 400'F for 25-30 mins or until done
