Ingredients:

  • 2 cups cornmeal
  • 2 tsp salt
  • 2 cups milk
  • 1 cup cracklings

Directions:

  1. Combine cornmeal, flour, baking powder, and salt; stir in egg and milk. Add cracklings to batter, stirring well.
  2. Heat two well-greased muffin pans in a 400° oven for 3 minutes or until very hot. Pour batter into hot muffin pans, filling two-thirds full. Bake at 350° for 30 minutes or until golden brown.
