Cottage Cheese Potato Salad

Ingredients:

Directions:

  1. Cook potatoes in their jacket until just tender.
  2. Cool until it can be handled then peel and dice into a bowl.
  3. Stir oil, vinegar and salt together and pour over hot potato tossing lightly.
  4. Cool completely then add celery, green pepper, pimento, olives and onion.
  5. Stir mayonnaise and cottage cheese together then add to salad and toss lightly.
  6. Chill then serve on lettuce.
