Cornmeal Pancakes With Applesauce

Ingredients:

Directions:

  1. Stir together flour, cornmeal, sugar, baking powder, apple pie spice and salt.
  2. In small mixing bowl combine eggs, milk and oil.
  3. Add all at once to flour mixture and stir just until blended but still slightly lumpy.
  4. Spray a griddle with nonstick spray coating then preheat griddle over medium heat.
  5. For each pancake pour about 1/4 cup batter onto hot griddle then cook 2 minutes per side.
  6. In small saucepan heat applesauce until warm then serve with pancakes.
