Ingredients:

Directions:

  1. Melt butter in fry pan.
  2. Add onion and mushrooms and saute til tender.
  3. Add ground beef.
  4. Fry until browned.
  5. Add one cup of tomato sauce, 1 cup cornflakes and 1/2 cup shredded cheddar cheese.
  6. Mix well and heat.
  7. Place several tablespoons in the centre of a tortilla shell.
  8. Fold in ends, and wrap sides around.
  9. Place 1 cup tomato sauce in bottom of greased 9 x 13 pan.
  10. Place filled enchiladas (seam side down) on top of tomato sauce.
  11. Pour remaining meat mixture on top.
  12. Bake 15 minutes 350F.
  13. Add 1/2 cup shredded cheese to top and place back in oven until melted (approx 5 mins).
