Ingredients:

Directions:

  1. Peel, boil and mash the potatoes with the butter and milk or cream and season well.
  2. Fold in 1/2 cup cheese
  3. Whilst the potatoes are boiling, sautee the onions until just tender
  4. Add the leeks and fry until the onions and leeks are soft but not brown
  5. Boil the cabbage until tender, drain and season with a little salt and plenty of pepper
  6. Combine the cabbage, onions and leeks with the mashed potato in an ovenproof dish
  7. Cover the top with the rest of the cheese
  8. Bake in a medium oven until the top is golden and bubbling
