Ingredients:

Directions:

  1. Set oven to 350 degrees.
  2. Lightly grease a cookie sheet.
  3. In a bowl, cream the butter with sugars until smooth.
  4. Add egg and vanilla; mix until combined.
  5. In a bowl, combine the flour, oats, coconut, baking soda, and salt; mix until well combined.
  6. Mix the dry ingredients with the butter/sugar mixture; mix well.
  7. Roll into 1-inch balls.
  8. Roll balls into the shredded coconut.
  9. Place on cookie sheet; bake until just barely golden (about 10-15 minutes).
