Ingredients:

  • 134 g yam
  • 294 g carrots
  • 226 g onion
  • 4 cloves garlic
  • 1 tsp ginger

Directions:

  1. Sautee onion and garlic for about 5 minutes in a few tablespoons chicken broth.
  2. Add the curry powder and ginger and saute another minute.
  3. Add yam and carrot and the rest of the chicken broth. Simmer, covered, 15 minutes, until veggies are soft.
  4. Puree in a blender in small batches. Be careful as steam can build up and may splatter and burn you.
  5. Return to pot, add coconut milk, salt to taste.
  6. Delicious, if you love curry, coconut and carrots as I do.
