Cocolate Mud Cake With Ganache

Ingredients:

  • 225 g butter
  • 350 g dark cooking chocolate'chopped
  • 1/3 cup warm water
  • 11/4 cups caster sugar
  • 11/2 cups ground almonds
  • 2/3 cup plain flour'shifted
  • 1 tbsp of rum or brandy
  • 200 g butter

Directions:

  1. Preheat oven to moderate 180C
  2. Brush a deep 20cm round tin wit oil or melted butter
  3. Line the base and sides with baking paper
  4. Melt butter and chocolate in pan over low heat
  5. Add water;stir till smooth.
  6. Remove fro heat and cool.
  7. Beat eggs yolks and sugar until thick and pale,
  8. Using metal spoon, fold in the chocolate mixture
  9. Then combined almond and flour
  10. Stir until smooth; add liquor
  11. Beat egg white in separate bowl until soft peak is form
  12. Fold into the mixture
  13. Spoon into the prepared tin;smooth surface
  14. Bake for one hour or until skewer comes out clean when inserted in the center or the cake.
  15. To make ganache
  16. Melt chocolate and butter in pan in low heat
  17. Stir till smooth
  18. Cool; stir occasionally an until spreadable
  19. Spread a third fo ganache on top and another 3rd around the cake.
  20. Pipe rosettes or swirls around the outer edges
