Citrus Jerk Orange Roughy

Ingredients:

  • 4 orange roughy fillets (each fillet should weight about 4 oz)
  • 1 tbsp jamaican jerk spice, plus
  • 1 tsp jamaican jerk spice
  • 1 tsp olive oil
  • 3 tbsp water
  • 2 tbsp lemon juice

Directions:

  1. Sprinkle both sides of the fish fillets with the jerk seasoning; pressing gently to adhere.
  2. Coat a large nonstick skillet with cooking spray.
  3. Addin oil and heat over medium-high heat until hot.
  4. Add fillets; cook for 3 minutes on each side or until fish flakes easily.
  5. Remove fillets from skillet; set aside and keep warm.
  6. Add orange marmalade and the remaining ingredients to the skillet.
  7. Bring mixture to a boil; cook for 1 minute.
  8. Pour sauce over fish fillets; serve immediately.
