Ingredients:

  • 1 1/2 tsp cinnamon
  • 1/3 cup soft margarine or 1/3 cup butter
  • 1/4 tsp baking powder
  • 1 cup brown sugar , firmly packed
  • 1/2 tsp salt
  • 1 egg
  • 1/4 tsp nutmeg
  • 1 1/2 tsp vanilla
  • 1/2 cup nuts, chopped (optional)
  • 1 cup flour

Directions:

  1. Preheat oven to 350 degrees. grease & flour a 9 x 9 pan.
  2. Mix dry ingredients. Cream the butter. Add the sugar & egg, then the dry ingredients alternately with zucchini, and finally the vanilla and nuts.
  3. Turn into pan and bake about 40 minutes. Cut into squares when nearly cool.
