Chunky Potato Soup

Ingredients:

Directions:

  1. Peel and cut Potates into Cubes
  2. Bring Water to a Boil in Large Saucepan.
  3. Add Potatoes and Cook until Tender
  4. Drain, reserving Liquid. Set Aside Potatoes
  5. Measure 1 Cup Cooking Liquid Adding Water if necessary; set aside.
  6. Peel, & Finely Chop Onion.
  7. Melt Butter in Saucepan over Medium Heat
  8. Add Onion to saucepan; Cook, Stirring Frequently, until Tender
  9. & Translucent, but NOT Brown
  10. Add Flour to Saucepan; Season with Pepper to Taste.
  11. Cook 3 to 4 Minutes.
  12. Gradually add Potatoes, Reserved 1 Cup of Liquid, Milk, and
  13. Sugar to Onion Mixture in Saucepan; Stirring Well.
  14. Add Cheese and Ham. Simmer over Low Heat for approximately
  15. 30 Minutes, stirring Frequently. Serve with Fresh, Sliced Italian Bread. Store Leftovers Covered, in Refrigerator
