Ingredients:

Directions:

  1. In a heavy bottomed pot, heat 1 tsp olive oil.
  2. Add chicken and saute until no longer pink, about 4 minutes each side.
  3. Remove chicken from pot, wipe pot dry.
  4. Heat remaining oil and saute onion, garlic, bell pepper and cumin seeds for 5 minutes,stiriing often.
  5. Stir in chili powder, oregano, tomatoes, tomato sauce, beer, salt and pepper.
  6. Add chicken back to pot.
  7. Cover and simmer on low heat for 20 minutes.
  8. Add beans, corn, and olives.
  9. Simmer 15 minutes longer.
  10. Stir in cilantro.
  11. Serve hot, topped with cheddar cheese.
