Ingredients:

Directions:

  1. Put your chickpeas in the pot with 1 cup of water
  2. Add bay leaf and your finely chopped onions, and chicken broth into chick peas
  3. Simmer for about 5-6 mins
  4. Remove HALF of your mixture (chick-peas, onions, broth and water) and puree it with a blender. Make sure you have a good amount of the liquid when blending, so that it blends well.
  5. Pour the pureed chick peas back into the pot
  6. Add all your other veggies, salt, and black pepper and the herbs mentioned above
  7. Mix together with oilive oil
  8. If thick, add water as you stir. Your soup should be hearty but not extra-thick.
  9. Cover for about 20mins
  10. Let stand for about 3mins
  11. Viola!
