Ingredients:

Directions:

  1. Place the cheeses, chorizo, scallions, chilies, and salt and pepper to taste in a bowl and mix together.
  2. Divide the mixture between 4 flour tortillas then top with the remaining tortillas.
  3. Brush a large, nonstick skillet with oil and heat over medium heat.
  4. Add one quesadilla and cook, pressing down with a spatula for 4-5 minutes
  5. Underside should be crisp and lightly browned.
  6. Turn over and cook the other side until the cheese is melted.
  7. Remove from the skillet and keep warm.
  8. Cook the remaining quesadillas individually.
  9. Cut each quesadilla into quarters.
  10. Serve while still warm!
