Ingredients:

  • 1 1/2 cups carrots, grated
  • 3/4 cup sugar
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Directions:

  1. Preheat oven at 350°F.
  2. Combine the carrots, sugar, and apple sauce and pour the boiling water over them. Let sit while you prepare the rest.
  3. In a separate bowl, combine the remaining ingredients and mix well.
  4. Now combine the carrot mixture.
  5. Pour into a well greased baking pan and bake for 35 minutes.
