Ingredients:

  • 3 tbsp peanuts (the recipe said '1 handful', 2 tsp natural peanut butter would also work)
  • 2 -3 slices ginger
  • 1/2 tsp salt

Directions:

  1. Place all ingredients in saucepan.
  2. Bring to a boil and simmer until peanuts and sweet potato are tender.
  3. Discard ginger slices, whirl soup in blender, and serve. Cilantro garnish would be pretty.
