Chilli Prawns with Linguine

Ingredients:

  • 1 clove garlic
  • 1 lime
  • 200 g prawns
  • 50 g rocket

Directions:

  1. Bring a large pan of water, lightly salted to the boil and add the linguine.
  2. When pasta is almost ready, heat 1 tablespoon olive oil in a frying pan and add prawns plus finely chopped and chilli. Cook for 12 minutes.
  3. Then add 1 chopped (or crushed) clove of garlic, and cook for 1 minute before removing pan from heat.
  4. Drain the linguini and drizzle with olive oil. Add the pasta to the prawns with 50g rocket and toss lightly to mix
  5. Add seasoning and a squeeze of lime, and serve.
