Chili Chicken Corn N Pasta

Ingredients:

Directions:

  1. Cook pasta and ears of corn in salted boiling water about 8 minutes.
  2. Drain and rinse with cold water.
  3. Mix 1 tsp chili powder, salt & pepper in a bowl and sprinkle over chicken breasts.
  4. In a large skillet cook chicken in 1 tbsp oil over med heat for 10-12 minutes or until chicken is no longer pink, turning once.
  5. While chicken is cooking, cut the kernels from the cobs.
  6. Combine the remaining oil and chili powder along with the lemon juice in a jar.
  7. Mix the chicken, corn, tomatoes and pasta
  8. Serve onto plates.
  9. Drizzle with prepared dressing (the jar of lemon juice oil & chili powder) and lightly sprinke lightly with salt & pepper.
