Ingredients:

  1. 1. Peel and Quarter potatoes. Cut quarters lengthwise in half into wide strips.
  2. 2. In 12 skillet (preferable ovenproof) heat oil and whole garlic over med-high heat until garlic becomes golden (about 4-5 min).
  3. 3. Remove garlic and set aside.
  4. 4. Add potato strips and cook 15 min or until potatoes are golden (turning often).
  5. 5. Remove and pat dry.
  6. 6. Add chicken, skin side down to hot oil. Brown slowly over medium heat, about ten minute
  7. 7. Turn chicken over and season with oregano, garlic powder, salt and pepper. Carefully add wine.
  8. 8. Add potatoes and garlic to skillet, and place skillet into oven at 400 degrees for 25 min (or until chicken is done) basting last 10 min with pan juices.
  9. 9. If your skillet is not oven proof (mine is not) put potatoes and garlic into a 9x13 aluminum pan, then transfer chicken and juices from the skillet. Bake at 400 degrees for 25 min (or until chicken is done) basting last 10 min with pan juices.
