Chicken Vegetable Rice (Like Rice a Roni)

Ingredients:

  • 1 (15 1/2 oz) can mixed vegetables
  • 1 small onion (chopped )
  • 1 large piece celery (chopped )
  • 2 tbsp chicken base
  • 1 tbsp chicken dripping (optional)
  • 2 tbsp butter or 2 tbsp margarine
  • 2 (1 cup) bags boil-in-the-bag rice (i used uncle ben's)

Directions:

  1. In a large skillet combine Veggies, Onion, Celery, 1 tablespoon Chicken Base and Butter. Let simmer for about 10 minutes.
  2. In a seperate pot prepare rice as directed after water comes to a boil, add the remaining Chicken Base.
  3. When Rice is done add it to the skillet along with the Chicken Drippings, Let simmer all together for about 15 minutes
  4. Serve immediatley.
