  1. Spray non stick pan with butter flavored spray. Brown chicken breasts lightly and set aside. Add olive oil to pan and saute onion and garlic until soft and lightly browned. Add red wine and cook a few minutes to cook down alcohol. Add ground fennel (if using powdered garlic, add that here as well), and cook until mixture becomes slightly pasty. Add canned tomatoes and tomato paste and stir well. Add chicken breasts and cook until breasts are completely done and have absorbed some of the sauce's flavor (about 10 minutes). Chop fresh herbs, sprinkle over the top, and stir in. Simmer a minute or so, then test for salt and pepper and add if desired.
