Chicken Marinated in Soy Sauce

Ingredients:

Directions:

  1. The night before - make the chicken marinade: in a bowl, mix the ginger, soy sauce, olive oil, cumin, paprika, juice of 1 lemon, salt and pepper.
  2. In this mixture, dip the chicken breasts and let it marinate all night.
  3. The next day (when you are ready to use them), grill the chicken breasts or cook them in the oven with all the marinade.
  4. For the veggies: wash and drain all the veggies. Cut the broccoli in small pieces.
  5. Leave the green beans whole and cut the squash in sticks or julienne but a bit thicker.
  6. Cut the onions. Steam the broccoli and green beans for 5 minutes.
  7. Heat the olive oil in a wok, add the onion and let it cook for 4-5 minutos constantly moving it, then add the cooked (steamed) veggies, the herbs and ginger.
  8. Add salt and pepper to taste.
  9. Cut the chicken breasts and serve with the veggies.
