Chicken And Mushroom Soup

Ingredients:

  • 1/2 lb mushrooms
  • 1/4 cup each: onion , carrots , celery chopped
  • 1/4 cup butter
  • 1/2 cup flour
  • 5 1/2 cups chicken broth
  • 1 tsp pepper
  • 1/4 tsp dried thyme
  • 1 tsp hot ppeer sauce ( optional )
  • 3 cups cream
  • 1 1/2 tsp lemon juice
  • 1/2 tsp salt or to taste

Directions:

  1. Saute mushrooms and vegetable in butter until softened and tender
  2. Stir in flour to blend.
  3. Add broth and seasonings and stir well.
  4. Bring to a boil then simmer , stirring uncovered 10 minutes.
  5. Stir in the cream, chicken, parsley, lemon juice and salt and simmer through - do not let boil
