Cherry Cornmeal Muffins

Ingredients:

  • 200 g flour
  • 120 g cornmeal
  • 70 g sugar
  • pinch of salt
  • 150 g cherries
  • 1 egg
  • 250 ml milk
  • 50 ml oil

Directions:

  1. Preheat your oven on 200°C.
  2. Mix together the flour, cornmeal, sugar, baking powder and salt.
  3. In another bowl, lightly beat the egg, add the milk and oil.
  4. Take cherries and sprinkle them with a bit of the dry mixture (so they don't sink in the dough when you bake it).
  5. Now add the dry ingredients to the wet ones, lightly mix them up, add the cherries, mix lightly again, divide the batter into the muffin pan and put in the oven.
  6. Bake for about 20-22 min, depending on your oven.
