Ingredients:

  • 1 tbsp fennel seeds
  • 1.5 tsp green cardamom seeds (6-8 bruised pods)
  • 4-6 whole cloves
  • 2.5cm cinnamon quill
  • 1 cm of fresh ginger (optional)
  • liquids
  • 4 tsp assam tea
  • 2 cups water
  • sugar to taste

Directions:

  1. Add spices to water and bring to the boil.
  2. Simmer for 3 minutes.
  3. Add milk and tea and return to the boil.
  4. Simmer for approximately 2 minutes, until a good colour develops.
  5. Strain into a jug, and add sugar to taste.
  6. Serve immediately, preferably with indian sweets!
