Use cheap tea! It should have a nice strong flavour to balance out the spices. Available from middle eastern or asian supermarkets. Builder's tea or similar grade is also good. Don't brew for too long though, or it will be too bitter! Read more ! You can use powdered ginger, but fresh gives a better flavour.
Ingredients:
spices
1 tbsp fennel seeds
1.5 tsp green cardamom seeds (6-8 bruised pods)
4-6 whole cloves
2.5cm cinnamon quill
1 cm of fresh ginger (optional)
liquids
4 tsp assam tea
2 cups water
2 cups full cream milk
sugar to taste
Directions:
1. Add spices to water and bring to the boil.
2. Simmer for 3 minutes.
3. Add milk and tea and return to the boil.
4. Simmer for approximately 2 minutes, until a good colour develops.
5. Strain into a jug, and add sugar to taste.
6. Serve immediately, preferably with indian sweets!
