Cathy's Greek Breakfast Omelet

Ingredients:

  • 6 large eggs
  • 1/4 cup skim milk
  • 10 oz spinach
  • 1 medium vidalia onion

Directions:

  1. Coat pie pan with Pam
  2. Defrost spinach in microwave, drain and set aside
  3. Put in onion and peper, microwave 1 minute
  4. Beat eggs with milk and pepper
  5. Put spinach in pie plate with now-cooked onion and pepper
  6. Pour in egg mixture
  7. Add feta cheese, pressing into egg mixture
  8. Cook at 350 degrees for about 30-35 minutes or until cooked through
  9. Cut in six pieces
  10. Refrigerates nicely for breakfast for the week
