Cathy's Greek Breakfast Omelet

crustless breakfast omelet; low carb high taste
Ingredients:
6 large eggs
1/4 cup skim milk
10 ounce spinach
1 red pepper
1 medium vidalia onion
3 oz feta cheese
Directions:
1. coat pie pan with Pam
2. defrost spinach in microwave, drain and set aside
3. put in onion and peper, microwave 1 minute
4. beat eggs with milk and pepper
5. put spinach in pie plate with now-cooked onion and pepper
6. pour in egg mixture
7. add feta cheese, pressing into egg mixture
8. cook at 350 degrees for about 30-35 minutes or until cooked through
9. cut in six pieces
10. refrigerates nicely for breakfast for the week
