Cashew Peach Sweet Potatoes

Ingredients:

  • 6 medium sweet potatoes , boiled until tender, drained, peeled and cubed
  • 1/2 cup brown sugar , packed
  • 1/2 tsp salt
  • 1/4 tsp ginger
  • 1 (15 1/4 oz) can sliced peaches, drained
  • 3 tbsp butter

Directions:

  1. Preheat oven to 350°F.
  2. Combine brown sugar, cashews, salt and ginger in small bowl.
  3. Spoon half the sweet potatoes into 11-inch x 7-inch baking dish.
  4. Top sweet potatoes with half the peaches and 1/2 brown sugar mixture.
  5. Repeat layers.
  6. Dot the top of casserole with butter.
  7. Cover with foil and bake 30 minutes.
  8. Remove foil and bake additional 10 minutes.
