Orange Glazed Sweet Potatoes

Ingredients:

  • 2/3 cup. sugar
  • 1 tsp. cornstarch
  • 1 tsp. salt
  • 1 cup. orange juice
  • 2 tsp. butter

Directions:

  1. Peel and halve potatoes. Arrange in 1 1/2 quart casserole dish.
  2. IN a small saucepan, stir together sugar, cornstarch, salt, and orange peel. Slowly add orange juice, and add butter. Cook, stirring constantly until mixture thickens and boils. Boil and stir one minute.
  3. Pour hot orange mixture over potatoes. Cover and bake for 1 hour in a 400 degree oven.
