Ingredients:

Directions:

  1. Bring stock to boil in a medium saucepan over high heat.
  2. Stir in rice.
  3. Immediately reduce heat to low.
  4. Cover and simmer 20-25 minutes, or until rice is tender and liquid is absorbed.
  5. Remove from heat and set aside.
  6. Heat oil in a heavy nonstick skillet over medium high heat.
  7. Saute peppers and garlic 2 minutes.
  8. Stir in next 3 ingredients. Bring to boil. Reduce heat to low, cover and simmer 5 minutes.
  9. Stir in rice and cilantro and serve.
